Free as a Bird Fajitas

We took the classic Tex-Mex fajita and defeathered it. With simple ingredients, minimal prep and a short cook time, these bright bites will be fast to the table and gone even faster.

Ingredients

  • 1 8oz pouch of Daring Original Pieces
  • 4, 7 inch flour tortillas (or gluten free tortillas)
  • 1/2 spanish onion, thinly sliced
  • 1/2 red bell pepper, thin strips
  • 1/2 orange bell pepper, thin strips
  • 1-2 tbsp grapeseed oil
  • 2 cloves garlic, minced
  • 1 lime (half juiced, half wedges)
  • 1/4 cup fresh cilantro leaves
  • 1 tsp chilli powder
  • 1/2 tsp sea salt
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon

CHEF'S NOTE:

  • Vegan Sour Cream, Dairy Sour Cream, Avocado, Shredded Cabbage, Black Beans

Step 1

Prepare your peppers, onion and garlic.

Step 2

In a saute pan, heat grapeseed oil over medium heat.

Step 3

Add daring and cook until they begin to golden, about 5 minutes.

Step 4

Add sliced onion and garlic and stir. Cook 3-5 minutes to soften.

Step 5

Add red bell pepper, orange bell pepper and sea salt.

Step 6

Add chili powder, ground cumin, ground coriander and ground cinnamon.

Step 7

Squeeze half a lime over the mix, stir, then remove from heat.

Step 8

Heat your tortilla and top with caramelized daring vegetable fajita mix.

Step 9

Sprinkle with cilantro leaves and serve with a lime wedge.
