Prepare scallion ribbons: Half scallion stalks lengthwise, and then cut thin strips lengthwise, tearing them into even thinner strips with hands. Place scallion strips into a bowl of ice water to let curl and crisp up. Alternatively, slice up scallions any way.
In small bowl, mince ginger and garlic. Mix in gochujang, gochugaru, sesame oil, soy sauce, brown sugar, grated ginger, minced garlic, mirin, and rice vinegar until fully combined.
Add oil in pan and bring to medium heat. Add entire pouch of Daring Original Plant Chicken, and let cook for 2 minutes. Add sauce and stir. Let cook for 5 more minutes, or until chicken begins to brown and sauce is thickened.
Top with sesame seeds and scallion ribbons and serve!
