Hometown Hero

We took that so-nostalgic-it-brings-tears-to-your-eyes deli sandwich you grew up with (and couldn’t possibly get anywhere else) and made it 100% plant-based—it’s piled high with zesty Lemon & Herb Daring, melty cheese, and plenty of sweet-and-spicy mustard. While we can’t definitively promise it’ll beat that corner deli special you grew up with, we can confidently assure you that it hits it home.

Ingredients

  • 1 pouch Daring Lemon & Herb Pieces, frozen
  • 2 tsp olive oil, plus more for brushing on bread
  • ¼ cup vegan mayonnaise
  • 3 tbsp dijon mustard
  • 2 tsp maple syrup
  • 1 tsp rice vinegar
  • ¼ tsp cayenne pepper
  • ¼ tsp kosher salt
  • 1 12” hero roll, split lengthwise
  • 4 slices thinly-sliced vegan cheese
  • ¼ cup thinly-sliced pepperoncini
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, thinly-sliced

Step 1

Place a large skillet over medium-high heat. When hot, add olive oil, and swirl to coat. Arrange the Daring Lemon & Herb pieces in one even layer, and sear for 5-6 minutes on each side, or until golden brown. Reserve on a clean plate.

Step 2

To prepare the spicy mustard sauce, whisk together the vegan mayo, dijon mustard, maple syrup, rice vinegar, cayenne pepper, and kosher salt in a small bowl.

Step 3

Preheat broiler on high heat. While the broiler preheats, brush the cut sides of the split hero roll with olive oil, and arrange cut side-up on a sheet pan. Broil for 3-4 minutes, or until just beginning to turn golden brown, and remove from the broiler. Reserve the top half of the roll on a cutting board until ready to assemble.

Step 4

Smear half the spicy mustard sauce on the bottom half of the toasted hero roll, and top with the seared Daring Lemon & Herb Pieces. Sprinkle the Daring with pepperoncini, and top with the vegan cheese. Broil until the cheese is completely melted — about 2-3 minutes. Remove from the broiler and allow to cool slightly.

Step 5

Cover the melted cheese with plenty of shredded lettuce and tomato slices. Drizzle with more spicy mustard, and top with the other half of the toasted roll. Slice in half, and serve immediately.
