The Daring Miami Arepa by conciously vegan

A note from @consciously.vegan

Miami is mostly known for its beaches and nightlife, but what I find most beautiful about my city is how multicultural it is. This melting pot is bursting with flavors from all different cultures, but our official food might just be...the arepa.

These Miami inspired gems are stuffed with flavorful black beans, creamy avocado, melted vegan cheese, and golden Daring Original Breaded Pieces - it’s the perfect way to bring some Miami flavor to wherever you are.

Step 1

Prepare black beans by adding oil to a medium-sized pot on medium heat. Next, add vegetables to the pot and saute until soft, about 3 minutes.

Add beans, water, bay leaf, cumin, oregano, red wine vinegar, salt and black pepper and bring to a boil. Lower heat and cover, simmer for about 15 minutes stirring occasionally. Taste for salt and remove from heat.

Step 2

Meanwhile, make the arepas by adding cornmeal, water, and salt into a bowl and mix until well combined. Roll dough into 4 balls and place in an arepa maker. Once done, set aside to cool.

Step 3

Once cooled, slice arepas in half and add vegan cheese to the bottom layer then microwave open-faced for 15 seconds to melt cheese.

Step 4

Prepare the Daring Original Breaded Pieces according to package.

Step 5

Next, layer arepa with black beans, Daring Original Breaded Pieces, and mashed avocado. Enjoy!
