Between Thanksgiving and weekends filled with holiday parties, we figured you might need a break from all those heavy holiday meals. So, we whipped up this delicious Warm Winter Squash Salad that strikes that perfect balance between light & refreshing and winter warmth.
1 8oz pouch Daring Original Plant Chicken
5 cups baby kale
3 medium carrots, halved
2 zucchinis, quartered and sliced
1 cup crispy chow mein noodles
1/3 cup rice vinegar
1/4 cup hoisin sauce
2 tablespoons canola oil
1 1/2 tablespoons soy sauce
1 tablespoon fresh ginger, grated
1/2 teaspoon toasted sesame oil
1 tablespoon honey
Heat a frying pan on high heat, then reduce to medium. Drizzle with 1-2 tbsp cooking oil and sear the Daring Original Pieces for 2-3 minutes per side. They are done when they have a nice golden-brown color to them.
Halve the carrots. Then quarter the zucchini lengthwise and cut into 1/2-inch-thick slices. Lightly oil a baking sheet and roast at 450 degrees for 25 minutes.
In a medium bowl, whisk together vinegar, hoisin sauce, canola oil, soy sauce, ginger, and sesame oil until combined.
In a salad bowl, add baby kale, then Daring, carrots, and zucchini and chow mein noodles. Top with dressing and enjoy!
