The ultimate summer lunch, starter, or light bite. We’ve taken a classic summer orzo salad and given it a twist by adding some juicy shredded Daring Plant Chicken and mixed up the veg. Any leftovers make for a delicious office lunch the next day.
The ultimate summer lunch, starter, or light bite. We’ve taken a classic summer orzo salad and given it a twist by adding some juicy shredded Daring Plant Chicken and mixed up the veg. Any leftovers make for a delicious office lunch the next day.
1/2 Pouch Daring Original Plant Chicken Pieces
1 Romaine lettuce heart
4oz Orzo pasta
½ Fresh lemon
1 Garlic clove minced
1 tbsp Creme fraiche
Pinch of salt
Pinch of pepper
Olive oil 1 tbsp
½ Zucchini grated
½ Red onion finely chopped
2-3 Sprigs of mint - leaves removed and finely chopped
Small handful of fresh flat leaf parsley finely chopped
Small handful of pistachios
Cook the orzo pasta as directed on the packet. Once cooked, drain, and set aside.
Meanwhile, heat a frying pan on medium-high heat. Drizzle with a little cooking oil and sear the Daring Original Plant Chicken Pieces for 2-4 minutes per side. Once cooked, place the pieces on a chopping board and finely shred with two forks.
Finely chop the red onion, parsley, mint and grate the zucchini.
Prepare the dressing by mixing the juice of half a lemon, creme fraiche, minced fresh garlic, salt and pepper.
Place the orzo pasta, finely chopped veg and shredded daring into a large mixing bowl and pour over the dressing.
Wash and dry the romaine lettuce leaves and individually fill each one with roughly 1 heaped tbsp of the Daring orzo.
Wrap up and enjoy!
If there is any leftover mix it makes a great Tupperware lunch the next day. Store in the refrigerator overnight.
