Curried Quinoa Salad

Ingredients

SALAD

  • Daring Original Pieces
  • 1-2 tbsp oil (for cooking Daring)
  • ½ cup shredded carrots
  • 1 red pepper, diced
  • ½ cup red onion, diced
  • 2 green onions, sliced
  • ¼ cup fresh finely chopped cilantro, to garnish

QUINOA

  • 1 cup quinoa
  • 2 cups water
  • 1/2 tsp salt

DRESSING

  • 1 tbsp curry powder
  • 1 tbsp lemon juice
  • ¼ cup plain unsweetened vegan yogurt
  • ¼ cup extra virgin olive oil
  • ¾ teaspoon yellow curry powder
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Step 1

Put the quinoa and water in a pot on the stove. The quinoa to water ratio is 1:2. This means, for every cup of quinoa, you will need 2 cups of cooking liquid.

Step 2

Cook the quinoa for about 15 minutes, or until the water is absorbed.

Step 3

Before preparing the salad, allow the quinoa to cool for 30 minutes.

Step 4

While the quinoa cools, cook your Daring pieces. Heat a frying pan on medium-high heat. Drizzle with 1.5-2 tbsp cooking oil and sear the Daring Original Plant Chicken Pieces for 2-4 minutes per side. They are done when they have a nice golden-brown color to them.

Step 5

Next, clean and chop the carrots, red pepper, and onions, and chop the Daring pieces in halves or quarters.

Step 6

Mix all dressing ingredients together in a large bowl

Garnish with cilantro. Will keep in an airtight glass container in the refrigerator for up to 4 days.
