Ingredients

  • 1 8oz pouch Daring Lemon & Herb Pieces, frozen
  • 1 tbsp olive oil
  • 8 slices thick-cut bread
  • 8 tsp vegan butter, softened (approx.)
  • 1 large head lettuce, roughly torn
  • 2 to 3 large tomatoes, sliced 1/4" to 1/3” thick

GREEN GODDESS DRESSING:

  • 1/3 cup chopped soft herbs (chives, parsley, dill, etc.)
  • 1/4 cup vegan mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

NOTES

If making DLTs for more than 4, double the ingredients as necessary. Instead of toasting your buttered bread in the skillet (in multiple batches), spread out the buttered bread slices evenly on a sheet pan and broil for 1 to 2 minutes or until golden brown. Flip and repeat for the remaining side.

Step 1

Place a large skillet over medium heat with 1 tbsp olive oil. When the oil is hot, add the frozen Daring Pieces in one even layer. Sear for 5 to 6 minutes on each side or until cooked through and golden brown. Remove from the skillet and reserve.

Step 2

While the Daring cooks, prepare the green goddess dressing. Using a food processor, immersion blender or regular blender, blend the herbs, vegan mayonnaise, lemon juice, salt and pepper until completely smooth and delightfully green—around 30 to 40 seconds.

Step 3

When the Daring Pieces are finished cooking, wipe out the skillet with a clean towel. Smear each side of bread with the softened vegan butter. Turn heat to medium-low and toast each slice of bread for 2 to 3 minutes on each side, or until toasted to your liking. Depending on the size of your skillet, do this in as many batches as necessary.

Step 4

To assemble your DLTs, spread a generous layer of dressing on the bottom piece of bread. Pile high with daring, lettuce, and tomato, drizzle with more dressing and top with another piece of toasted, buttery bread. Serve hot.
