Look! Up in the Sky! It’s Superfood Salad!

Our Original Pieces get tossed with nutritious veggies and high-fibre quinoa and topped with a creamy tahini dressing, proving once and for all that not all heroes wear capes.

10 minutes | Serves 2-4

Ingredients

  • 5 oz
  • 4 cups
    baby kale
  • 1/2 cup
    white quinoa
  • 12-16
    cherry tomatoes, halved
  • 1 cup
    shredded cabbage
  • 1 cup
    delicata squash (or your favorite squash), seeded and sliced or diced
  • 1/2
    watermelon radish
  • 1/4 cup
    pomegranate seeds
  • 1 tbsp
    coconut oil
  • 2 tbsp
    olive oil
  • 1/4 tsp
    sea salt
  • 1/4 cup
    tahini
  • 1/4 cup
    water
  • 1/2
    lemon, juiced
  • 1 tbsp
    cilantro, finely chopped
  • 1/2
    clove garlic, minced
  • 1/2 tsp
    sea salt
  • 1/4 tsp
    black pepper

Equipment

  • Medium pan
  • Whisk

Method

Step 1

Cook quinoa according to package, then cool.

Step 2

Toss sliced delicata squash with olive oil and sea salt. Roast at 375 degrees foe 12-15 minutes.

Step 3

Heat coconut oil in saute or fry pan over medium heat.

Step 4

Add original daring pieces and cook until golden brown, about 8 minutes.

Step 5

Whisk ingredients for dressing until smooth and creamy.

Step 6

Assemble your salad! Portion out the quinoa, baby kale, cherry tomatoes, watermelon radish, cabbage, squash and top with daring pieces and pomegranate seeds. Drizzle with creamy tahini dressing and enjoy!
